Background: Enterohemorrhagic Escherichia coli (EHEC) is a subgroup of Escherichia coli bacteria known for causing foodborne illnesses with severe clinical implications. EHEC strains, notably serotype O157:H7, are responsible for outbreaks of hemolytic uremic syndrome (HUS), a condition characterized by hemolytic anemia, thrombocytopenia, and acute kidney injury. Infection typically results from consuming contaminated food, particularly undercooked ground beef, unpasteurized milk, and contaminated vegetables. EHEC produces Shiga toxins, contributing to the severe symptoms observed in infected individuals. Treatment is mainly supportive, as antibiotics might exacerbate toxin release; careful fluid and electrolyte management is essential, especially in patients with HUS. Preventive measures such as thorough cooking of food and practicing good hygiene are crucial in mitigating EHEC-related outbreaks and minimizing the impact of these infections.
